Cross-Contamination Prevention

Keeping something visibly clean and preventing contamination are not always the same thing. In food production, cleaning procedures must consider how microorganisms, allergens, foreign material and other contaminants could move from one area, surface or product to another.

The Food Standards Agency describes cross-contamination as bacteria being spread between food, surfaces or equipment, and recommends separating equipment and cleaning materials where different food risks are handled.

Where can cross-contamination come from?

Contamination can move through a production environment in many ways. Common routes include:

  • Hands and clothing
  • Cleaning tools
  • Production equipment
  • Floors and drainage areas
  • Wheels and footwear
  • Ingredients
  • Waste
  • Reusable containers
  • Maintenance equipment
  • Air or water movement
  • Poorly controlled storage

This is why contamination prevention needs to be viewed as a complete system rather than simply a cleaning task.

Separate cleaning equipment by area

One practical control is to prevent cleaning equipment moving unnecessarily between different production areas.

A broom that has been used on a floor in one area should not automatically be taken into another zone and used around food production machinery.

Dedicated tools can be assigned according to production area, hygiene risk, task or allergen.

Colour coding makes these rules easier to recognise visually.

Use the right cleaning tool for the task

Poor tool selection can make cleaning harder than it needs to be.

A soft broom may work well for fine dry debris, while a stiff brush may be required for heavier deposits. Squeegees can remove water from floors and surfaces, while specialist tube brushes help reach inside pipes and difficult areas.

The objective is not simply to have cleaning equipment available. It is to provide equipment that allows employees to carry out the defined cleaning procedure effectively.

Keep cleaning equipment clean

Cleaning tools themselves can become a contamination risk if they are not maintained correctly. After use, equipment should be cleaned according to your site's hygiene procedures, inspected and allowed to dry appropriately before storage.

Store equipment properly

Leaving cleaning equipment on floors, machinery or ledges can undermine an otherwise well-designed hygiene programme. Dedicated wall storage keeps tools away from working surfaces and makes it easier to identify where equipment belongs.

Shadow boards take this further by providing a clearly defined location for individual tools. This can also make missing or misplaced equipment easier to identify. Consider allergen cross-contact

Allergens require particular attention because cleaning that removes visible food residue does not necessarily mean allergenic proteins have been removed sufficiently. Cleaning procedures should therefore reflect the particular food, surface, equipment and allergen involved.

FSA research has found that cleaning effectiveness can vary considerably according to factors including the food involved, surface, cleaning method, chemicals, temperature and mechanical action. There is no single cleaning approach that is effective in every situation.

Build prevention into everyday routines

The strongest systems make good practice easy to follow.

Clear zoning, colour-coded tools, suitable storage, documented procedures and regular training all reinforce one another.
